This recipe is tried and true. Quick, full of healthy ingredients, and so tasty that the kids love it too.

Ingredients:

  • 1lb strip steak (optional)
  • 2 tablespoons olive oil
  • 2 cups heavy cream
  • thick cut pasta
  • half a sweet onion
  • cup of sweet peas (and any other veggies you'd like to add like carrots or peppers)
  • tablespoon of minced garlic
  • one lemon
  • salt + pepper
  • freshly grated parmesan

  1. Sauté chopped onion in large skillet until tender.
  2. Add in garlic and continue sautéing.
  3. Meanwhile, begin boiling pasta in salted water and slicing up strip steak into strips. Season steak with salt, pepper, and dried garlic (optional). Begin cooking in hot cast iron pan with a table spoon olive oil. Cook just until done, a few minutes total.
  4. Turn down heat under onions and garlic and add in two cups of heavy cream, stirring as you pour in. It's important to keep the cream moving while it adapts to the heat. Continue mixing the cream in with the onion and garlic.
  5. Add sweet peas (frozen) to the boiling pasta water. Cook until pasta is done and peas are tender. If you're adding other veggies, cook them as needed and add in in step 8.
  6. Back to the cream - add the zest of one lemon and the juice of half the lemon. You can add the juice of the whole lemon if you like it extra lemony!
  7. Set finished steak to the side - cover to keep warm.
  8. Add the pasta and peas/veggies to the pan with the lemon cream. Mix well.
  9. Sprinkle freshly grated parmesan over pasta.
  10. Serve pasta in a bowl with a few strips of steak on top. Add more parmesan if desired.
  11. Enjoy!
